Healthy Meals when On a Mission

I am here to tell you the gospel of something I discovered through a combination of Youtube and a coworker:  Spaghetti Squash.  This here is the truth!!!  Spaghetti squash is an alternative to pasta.  Not only is it an alternative, a small squash makes a casserole dish full of squash.  It is also filling!  You can prepare the squash by either boiling or baking it.  I baked my squash for 2 1/2 hours so it could be soft.  If you cook it less, it will have a crunch texture.  Although the baking of the squash takes time, once you are done you can feast off of it for days.   It can be eaten by itself, or you can make a yummy sauce.  The picture below is a fresh batch I made today.  I made a sauce which consists of no salt added tomato sauce, vietnamese chilli and garlic sauce, roasted red pepper tapenade, mushrooms, fresh cut tomato, cilantro, parsley,  and shrimp.  I used accent and cayenne pepper to season.   I sprinkled fat free cheddar cheese as a garnish.   It is spicy and delish.
