I am not a big fan of the holidays, but New Years Eve and New Years Day are definite exceptions! It is something about closing a chapter on a year that is exciting to me. What better way to celebrate is to cook a healthy, yet tasty meal! Hence, I cooked some stuff yellow peppers. I stuffed the peppers with brown rice, eggplant, mushrooms, garlic, jalepeno peppers, and onion. I placed some tapenade in the bottom of the peppers prior to stuffing them. I placed them in the oven on 400 degrees then topped the peppers with the some more tapenade for the last 15 minutes of baking. I baked the peppers for approximately 30 minutes.
This is a good and healthy way to have a hardy New Years meal without guilt.
